Paneer Bhurji Recipe
Paneer Bhurji is a popular North Indian dish. It's a side dish that is quick & yummy made using grated paneer, sautéed in oil with Indian spices, onions and tomatoes. It’s a great side dish to eat with hot wheat parathas and sliced or pickled onions.

Ingredients
2 tbsp oil1 medium sized onion (finely chopped)
1 medium sized tomato (finely chopped)
1 green chilli (finely chopped)
1 tsp ginger-garlic paste
salt to taste
1 tsp kashmiri red chilli powder
¼ tsp turmeric
2 cup paneer / cottage cheese (crumbled/scrambled)
2-3 tbsp coriander leaves (finely chopped)
Method
1.In a large pan heat oil and add onions, green chilli and ginger-garlic paste.Saute till the onions turn slightly golden brown.
2. Add tomatoes and saute till they turn soft and mushy.Add chilli powder, turmeric powder and salt.
3. Add the crumbled paneer and mix gently without mashing out the paneer and let it not cook for more than 2 to 3 minutes as overcooking the paneer will lead to the paneer being rubbery.
4.Add the coriander leaves and mix gently, making sure everything is combined well.Serve the bhurji hot with Parathas and some sliced onions .
