Healthy Indian Dessert Quinoa Halwa


The word " Halwa" is definitely likely to cause increased salivation in most Indians but we mostly don't explore a lot of gluten-free Halwas. So having worked with Quinoa and through these years of working with it have understood the pros and cons of quinoa and quinoa flour and have understood the correct and effective way of using Quinoa. Quinoa is a highly nutritious grain and it is high in protein hence making it a great option for vegetarians and also for people following a gluten-free diet. The making of Quinoa Halwa is in line with the normal Halwa technique and the Desi - ghee is what gives the most authentic ‘Halwa’ flavor and aroma! This Halwa  is a delicious blend of Quinoa and Jaggery and is rich on the health side as is loaded with Protein, Fiber, and Iron. So let's right away get to the ingredients - 

Ingredients 
3 Tbsp ghee
1/2 cup Quinoa Flour 
1/2 cup powdered jaggery in 1 cup water 
1 pinch saffron 
Crushed Cardamom pods(optional) 
2 - 4 tbsp chopped nuts

Method 
1.In a Kadhai add ghee, followed by the chopped nuts and after a minute add 1/2 cup quinoa flour. Roast the flour on low flame by stirring continuously.
2. After  a good 6 to 8 minutes of stirring the flour, you will notice the flour would have changed colour and  become a little darker and the aroma filling the kitchen😊
3. While the flour is being roasted, in another pan add the powdered jaggery, water, saffron and crushed cardamom pods(optional). Let it come to a boil( do not put on high flame). 
4. Once the flour is completed roasted strain in the jaggery syrup/water into the halwa( it will splutter so just keep a safe distance) and stir till it thickens. One can either enjoy it thick or can add an additional 1/4 cup of water and cook it for few few for minutes. 
Serve it  and enjoy it hot with some additional chopped nuts.
