Khaman Dhokla
Khaman Dhokla or the steamed savoury cake is a popular snack from the state of Gujarat in India. There are various ways of making the Khaman Dhokla although the ingredients in the varied recipes will be predominantly same but with few additions and deletions. The steam cake is healthy and what makes it delicious is the tempering. The dhokla is usually served with a green chutney and a sweet tamarind chutney with a fried chilli. I have tried a few different recipes but the one that has been a hit at home for its texture and taste is the quick and easy Khaman Dhokla Recipe by Chef Junal Kapoor. The steps are quite straight forward and has a set process but the addition of curd and oil gives the dhokla a very delictable consistency. There are couple of changes I made to the original as used 4 tbsp of oil instead of 2 Tbsp and also used cut ginger and chilli rather than paste. Finally instead of pouring the batter into a single container I used muffin moulds-it's just cuter to look at πand serve. For ingredients do check out the recipe by Chef Kunal Kapoor.
