Vegan Snicker Bars

These homemade vegan-snicker bars are raw, naturally sweetened and delicious and can be made with few simple ingredients which I am sure you will be having at home. The recipe is easy and will totally knock your socks off as its a perfect blend of richness to sweetness  with a tangible crunch( from peanuts and the chocolate coating).  It's a perfect midnight sweet treat  so do give it a try :


Ingredients 
Nougat Layer 
1 1/2 cups rolled oats
 3-4 tablespoons virgin coconut oil, softened
 1/4 teaspoon  salt
 1/2 teaspoon pure vanilla extract
 3 Tablespoon Honey 

 Caramel layer
 225 —250 g of pitted dates, 
 3-4 tablespoons of all-natural peanut butter
1/4 teaspoon pure vanilla extract 

 Additional ingredients: 
1 cup roasted peanuts, roughly chopped
 1 cup  chocolate chips for coating the bar


Method 
1.Remove the pits/seed from the dates  and transfer the dates to a larger bowl and cover with hot water. Soak the Dates for 10 - 20 minutes

2. Nougat layer 
Blend the rolled oats in a blender for 45-60 seconds until smooth and flour texture. Add the coconut oil, vanilla essence, honey and salt and blend till it is workable consistency. Firmly and evenly press the Oat Flour Nougat into a small and narrow container /tray/ silicon square mold.Place in freezer till you make the date caramel layer. 

3.Caramel Layer 
Drain any excess liquid off of the dates (they should be relatively moist and easy to use) and add them to a blender with peanut butter and vanilla essence and process until thick, smooth and slightly sticky, scraping the sides of the device if necessary.

Use a spatula spread the  Date Caramel evenly over the Nougat layer and then sprinkle the roasted Peanut Pieces( whole/ chopped) over the Caramel. Use your fingers to press the Peanuts into the Caramel layer, so they stick.
Place this in the freezer for 60-90 minutes, until firm(important step). Can be kept overnight too. 
4.Remove the frozen “filling” from it’s container, then use a sharp knife to cut it into bar-sized pieces. Return these to the freezer while you melt your chocolate.
5.Melt your chocolate by placing the  Chocolate pieces in a wide bowl and microwave at 30 seconds intervals, stirring in between. Once the Chocolate is around 70-75% melted, stop microwaving and stir the mixture with a spatula until completely melted.
Moving quickly, place 1 snicker bar into the bowl of melted Chocolate. Use two forks to “flip” the bar, until it is coated in chocolate on all sides. Remove the bar from the melted Chocolate and place it onto a plate lined with parchment paper. Repeat with the remaining bars.

Place the bars in the fridge for 5-10 minutes, to allow the Chocolate to harden.
Just let the bars thaw for 5 or so minutes before enjoying.
