Paneer Satay with Peanut Sauce

Satay is a popular Southeast Asian street food that usually involves a marinated meat being skewered and grilled, then served with a simple saucy dip. Depending on the region, there are countless variations of the satay and I chose to prepare a vegetarian version of it with protein-rich paneer. It is infused with dynamic flavors of aromatic spices and peanuts and  is an excellent recreation of the traditional Indian kebab with an unusual twist of peanut butter and coconut milk and luxurious taste of thick paneer. 


Serves 4 to 5 pieces 
Ingredients 
For the marination
Paneer 200g
Ginger garlic paste 1 Tsp
Soy sauce 2 tbsp
Red Chilli sauce 1 Tsp 
Sweetener 1/2 tsp
Cumin powder 1/2 tsp
Coconut milk 3 to 4 tsp
Lemon juice 1 tbsp(optional) 
Salt as per taste 

For the peanut sauce
Olive oil 
Chopped Garlic 2 tsp 
Chopped Ginger 2 tsp 
Chopped Chilli 2 tsp 
Onion 1nos finely chopped 
Chilli powder 1 Tsp 
Peanut butter(natural)  2 to 3 tbsp
Coconut milk 1/4 cup +1/4 cup 
Salt to Taste


Method 
~ For the Marination 
In a mixing bowl add all the marination ingredients and mix it well. Slice the paneer longitudinally( 4 to 5 pieces). Marinate the paneer pieces in the marinade and keep it aside or refrigerate for  20 to 30 minutes.

~For the peanut sauce
In a pan add a tablespoon of oil followed by garlic, ginger and chilli. Saute for 1 to 2 minutes followed by the onions. 
Saute for 3 to 4 minutes. 
Add the chilli powder and peanut butter. 


Add 1/4 cup of coconut milk and after it
 thickens add the remaining 1/4 cup of milk. 
Stir the sauce and after it thickens taste and season with salt. Keep aside 

~To assemble the paneer satay
Place the paneer into the skewer sticks and heat a non-stick grill pan with some oil. Put the skewered paneer over it and cook on slow to medium flame.Toss and turn and let it cook from the other side too.
Take it out on a plate and serve with the peanut sauce.
Serve hot and garnish with some fresh herbs.
