Ingredients
96 g all purpose flour
150 g powdered sugar
110g cup unsalted butter, softened
2 eggs
3 to 4 tablespoon fresh orange juice
2 tablespoon orange zest
1/4 tsp vanilla essence
Pinch of salt
Glaze( optional)
½ cup powdered sugar
2 teaspoon orange juice
1 teaspoon orange zest
Method
1.Preheat the oven to 180°C and line a rectangle baking pan with parchment paper, allowing some overhang for easy removal.
2.In a large bowl, add the butter and eggs and use a hand mixer at medium speed beat for a couple of minutes.
3. Add the powdered sugar and cream togther until light and fluffy.
5. Now sift in the all purpose flour and add the orange zest.Beat the mixture until well combined and a smooth batter forms.
6.Pour the batter into the prepared pan, spreading it evenly.
7.Bake in the preheated oven for 25 to 35 minutes or until the edges turn golden brown, and a toothpick inserted into the center comes out clean.
8.While its baking, prepare the orange glaze by mixing the powdered sugar, orange juice, and grated orange zest in a small bowl until smooth( this glaze can be skipped , the cake without the glaze is delish as well).
9.Once the cake are done, remove them from the oven and allow them to cool in the baking dish for a few minutes.
Pierce the cake with a fork prior to glazing for better absorption. Drizzle the prepared orange glaze over the cooled cake allowing it to set for a few minutes.
Cut into squares and serve.
