Creamy Vegetable Bake Recipe |Vegetable Bake with Coconut Milk |Microwave Recipe
Vegetable Bake is a medley of oven-baked vegetables in a creamy white sauce. It is an all-time classic vegetarian main course. In order to prepare this delicious mixed vegetable casserole recipe, I choose some fresh veggies that I love. However, you can always change them or add more vegetables. This is also a great veggie casserole that you can make when you have loads of vegetables and you don’t know what delicious recipe to make.
Ingredients:
1 tbsp Olive oil
350 g of chopped veggies ( small pieces)*
200 ml of thick coconut milk
1 tbsp of maida or rice flour
2 to 4 slices of bread( roughly torn)
Mozarella cheese
Salt and Black pepper to taste
Oregano and chilli flakes
*If your using cauliflower or broccoli do blanch it in hot water and then add it.
Directions:
Add all the veggies , salt , black pepper , oregano and oil in a microwave safe bowl. Microwave for 6 to 8 minutes.
Mix the coconut milk and maida/ rice flour in a separate bowl and mix until a smooth mixture.
Now pour this into the veggie mixture , mix well and microwave for another 4 to 5 minutes.
Now roughly chop or break the bread into small piece or even use bread crumbs and spread it on the veggie mixture. Top it with loads of cheese and sprinkle some oregano and chilli flakes.
Microwave for 4 to 5 minutes and the vegetable bake is ready.
