Quinoa "Fried Rice" Recipe
Quinoa Fried Rice is a healthier and a twist to traditional "fried rice" . It combines the traditional fried rice Asian flavours with colourful veggies of choice giving the same awesome deliciousness of the classic fried rice. Chopped coriander as garnish(optional) at the time of serving brings out the savory flavor of the dish.

Ingredients
2 tablespoon olive oil /Ghee3 cloves garlic minced/Garlic paste
1/2 tsp of ginger paste or fresh ginger minced
2 green chilies diced/chopped
1/4 Cup onions finely chopped
1/4 cup carrot diced
1/4 cup green beans diced
1/2 cup bell pepper
*the veggies can also include peas/broccoli/mushroom( 1 cup sliced)/ babycorn(1/4 cup)
2 teaspoon soya sauce (adjust to suit your taste)
1 teaspoon white vinegar ( optional)
1.5 cups cooked quinoa (* for making fluffy quinoa check this link out 👉Fluffy Quinoa)
Black pepper to taste
Salt to taste
Freshly chopped coriander leaves for garnish
Method
1.Heat oil in a wok and add in the minced garlic, ginger, chopped green chilli and onion in the wok over medium-high heat, stirring until fragrant and the onions translucent.
2. Add all the veggies and cook them on high flame for 2-3 mins( the cooking time of the veggies will vary based on the size of the chop/cut) followed by soya sauce and vinegar, mix well and cook for 1 minute.
4.Add chopped coriander and sauté for few seconds.Taste and adjust seasonings accordingly.
Your quinoa fried rice is ready to be served. Serve hot.
